"Our grapes are crushed while still in their whole berry state. The juice is chilled and settled for 24 hours at 50 degrees Fahrenheit. Included in our blend of Sauvignon Blanc is a small amount of Wente Clone Chardonnay, which is grown at 1400 feet elevation on Pritchard Hill and was originally planted in 1975. These grapes were also whole clustered pressed. The addition of Chardonnay to the Sauvignon Blanc creates a fuller and rounder texture. The Sauvignon Blanc and Chardonnay were fermented in neutral French Oak Barrels. The lees were stirred weekly over a period of six months. The blend is 75% Sauvignon Blanc and 25% Chardonnay."
